Preparation Instructions
Add oak chips, sugar, water, and cinnamon to a large saucepan on low heat.
Simmer for 3 hours then cool slightly.
Add to a plastic bag, vacuum seal, and heat in a water bath for 2 hours at 161F, or continue cooking in saucepan for 2 more hours if you don't have a vacuum chamber.
Strain out the oak chips and cinnamon sticks.
