15 mlfalernum, house-made

15 mlgrapefruit juice, fresh

3 dashesascorbic acid solution

3 dashesYakima salt solution

90 mldry sparkling wine

1 pinchsmoked salt, applewood

1 lime, wedge

Shake and strain into a double rocks glass filled with ice.

Top with sparkling wine, a pinch of smoked salt, and a lime wedge.
