Up to 2 days ahead, combine the junmai sake, Sercial madeira, and banana liqueur in a 1-liter bottle and refrigerate.

Juice the lemon and prepare aquafaba up to 8 hours ahead.

Shake the spirit batch with lemon juice, aquafaba, cane sugar syrup, and ice.

Strain into a double old-fashioned glass over 1 large cube.

Garnish with a banana leaf strip.
