Add cracked ice and the Herbsaint to a rocks glass and set it aside so the glass can coat.

In a mixing glass, combine the bourbon, sweet vermouth, Averna, and bitters.

Fill with ice and stir until well chilled.

Swirl the Herbsaint and ice around the rocks glass to coat the interior, then discard the ice and liquid.

Strain the stirred mixture into the prepared rocks glass.

Garnish with a lemon peel.
