3 Anjou pear, small ripe slices

30 mlOld Tom gin, pennyroyal-infused

Hayman's Old Tom Gin

30 mlLondon Dry gin

Tanqueray No. Ten Gin

25 mllemon juice

10 mlorgeat syrup

10 mlcinnamon syrup

10 mlacacia honey syrup

1 lemon, wheel

In a shaker, muddle the pear slices.

Add the remaining ingredients and shake with ice, then strain into a Nick & Nora glass.

Garnish with the lemon wheel.
