5 fresh pineapple, 1-inch square chunks

8 mint, leaves

30 mllime juice, fresh

15 mldemerara syrup

15 mlpeach liqueur, natural

45 mlblended lightly aged rum

1 clustermint, sprig

1 mint, leaf, large

Muddle the pineapple chunks.

Flash blend with 12 oz of crushed ice.

Double strain into a chilled coupe glass.
