Parish Hall Punch

Peel the grapefruits while leaving behind as much white pith as you can.

Put the peels in a large bowl with the sugar, muddle them lightly, and rest 20 minutes so the peel oils infuse the sugar.

Stir in the gin, sherry, cider, ginger beer, and seltzer.

Add the ginger coins and grapefruit slices to the bowl.

Ladle into punch cups over ice.

Serves 8.
